He was found by a member of the public, and his condition was so serious at the time, he was unable to speak to police.
The man was treated by paramedics and taken to Westmead Hospital in a critical condition, where he underwent surgery for head injuries with his wife and children by his side.
Police were told the man died in hospital on Monday.
NSW Police Superintendent Craig Middleton said the alleged attack was “vicious” and “cowardly”.
“We believe it was a random attack. This poor man was going on his morning walk,” he said on Tuesday.
Middleton said the victim was an “upstanding member” of the local community and the family was struggling to come to terms with his death.
“He’s a husband and a father to six children, and at the moment they are dealing with an enormous amount of grief,” he said.
“Our condolences go out to them.”
Police issued a warrant on Sunday for the arrest of Corum Ash, 45, over the alleged assault.
NSW Police said in a statement on Tuesday morning they had carried out a search warrant on a home in Carlingford and seized several items believed to be linked to the alleged assault.
